Thunderbird is set to open .png or .jpg files with Ristretto which it can't find since the command line for the program doesn't have a cap letter (-> should be: ristretto)

Uhmmm.. it works fine here. "Ristretto" is the name of the app as specified in the ristretto.desktop file. "ristretto" is the executable name which is actually called by thunderbird. And thunderbird works fine with it as far as I can see. It's not a thunderbird option in any case, it's a mime-type thing.

Look into Edition/preference/attached files (loosely translated from my French setup)
