When you install programs using slapt-src, does the apps get updated/upgraded when you run 'slapt-get --upgrade' command? If not, how would I upgrade programs that I've installed using slapt-src command? I'm just trying to understand how slapt-src works as far as updating/upgrading.

No, it's like a manually installed package not from the repository. You need to upgrade them explicitly manually by building the new version with slapt-src.
