I can live with the GPT partitioning if necessary, but isn't there a work around for the EFI partition when I am booting in legacy mode?

From what you have posted, you think that you are booting into legacy mode, but you are actually booting into UEFI mode. It seems to be a bug with the implementation of UEFI in your PC.

OK. I will bite the bullet and try to install it in UEFI mode tomorrow.

Wow! Amazing! That is the way it should be done! Congratulations to the team for making an UEFI install so trivial. I spent two days and used a whole thread trying to get Debian Jessie installed on my Lenovo Q190, and then ended up having to give up and find out how to set the box to legacy mode.
