I'm not running xfce anymore. But they were stored in xml files, which were afaik located in .config.
If you wanted to try something fancy, I reckon you could find all files a programm runs with strace (e.g. strace xfce4-keyboard-settings). Probably you should append '2>&1 | tee log' then.
